• 3 Eggs
  • 2 cups of Flour
  • tea spoon of Salt
  • Beef or Chicken stock


Beat eggs until frothy with a whisk.
Add flour and mix until dough is created. Knead until smooth.
Turn onto a floured chopping board.
Roll dough (turning often) until thin.
Leave to dry for 45 minutes, then turn and dry another 30 minutes.
Cut into noodle strings.
Drop into a saucepan of boiling beef or chicken stock.
Reduce heat and simmer for about 20 minutes.
Season to taste and serve.
